Easy going and educational experience! Our host/sensei Ms. Yuka guided us through 5 common Nagoya region dishes. She provided some educational background on origins and differences in ingredients as well as why they are used. The class was hosted at an easy to access location as well. Would recommend!

This is a must do workshop for any home cook who wants to be able to produce Kyoto Sushi for their family and friends. It is easier to make than the Tokyo sushi which is more widely known. I attended this Kyoto Sushi Making workshop lead by Mitsuru, the third generation chef running the restaurant. He explained a little of the history of sushi and in particular the differences between Kyoto and Tokyo in terms of sushi style. He also showed the technique for sharpening the sushi knife as it cannot be sharpened by a knife sharpener like western knives. An important difference is also the vinegar used and he explained about the two types and how they are made. Then he took me step by step through making Kyoto Sushi getting me to follow his example and do it for myself. Some elements like the rice and the diced shitake mushrooms he had already prepared. He guided me to an end result that looked surprisingly okay for a first attempt. The proof was in the eating and it tasted very good. It was a very enjoyable and worthwhile two hours. Mitsuru is clear in his explanations and uses visuals to help understanding. He also gives many pointers from his experience of running a very successful sushi restaurant.

What a wonderful experience! Everything was clearly explained and conducted in a friendly and welcoming environment. It was a real learning experience, and you got to eat your handiwork when you were finished. The host explained and demonstrated everything first and then let's you do it on your own. Very authentic and highly recommended!
