Something as seemingly simple as udon noodle soup or a bowl of seasoned rice can taste surprisingly different in Tokyo than in Osaka, and there’s a reason. Dashi soup stock, a fundamental ingredient used to enhance umami flavors in multiple dishes, differs in each region.
Learn what makes the cuisine of Osaka so delicious and unique in this hands-on cooking class in Kyoto. You’ll learn to make two comforting home-style dishes with a rich dashi broth made with kelp and mackerel flakes.
Your first dish will be kitsune udon, which translates to “fox udon.” Using pre-made udon noodles, you’ll assemble your dish with a light broth topped with sweet simmered fried tofu. This Osaka staple takes its name from the belief that foxes love fried tofu, and after trying this dish, you’ll definitely see why they would.
You’ll also be making kayaku gohan, a fragrant rice dish with shiitake mushrooms, burdock root and carrots. Both nutritious and packed with umami flavors, this will perfectly complement your udon meal.
And while these traditional dishes are usually off-limits to those with dietary restrictions, this class caters to several needs.
