We were so inspired that we purchased a matcha whisk and matcha powder afterward to continue practicing at home.

I had a remarkable dining experience at Najimia, enjoying dishes featured in Tofu Hyakuchin, a book from the Edo period that showcases over 100 tofu dishes. The highlight of the meal was the mineoka-dofu, an Edo-style panna cotta. This delicate dessert featured silken tofu with a velvety texture and a perfectly balanced sweetness, making it both comforting and refined. The meal was complemented by a delightful and interactive tatami coaster atelier. It was not only fun but also engaging as I learned the meticulous process of making these intricate coasters. It added a unique, hands-on touch to the experience. Afterwards, the tea master guided through the techniques for preparing the perfect matcha, from precise movements to proper etiquette. While the master spoke mainly Japanese with limited English, the assistant was fluent in English and provided translations throughout. By the end, I confidently prepared my own delicious matcha, leaving with a deep appreciation for Japanese tea culture.
