The smell of hand-fanned, charcoal-grilled matsutake mushrooms will fill your dreams for weeks after dining at Hiyama, a kappo restaurant in Kawaguchi where fungi is the star of the show.


Just a few minutes from Higashi-Kawaguchi station, this restaurant prides itself on serving the best local, seasonal ingredients. Alongside the matsutake, they serve fish and beef, with crusty bread to mop up the rich juices left at the end of their dishes.


Several set-course menus are available, with one focusing primarily on the mushrooms, and another with extra-generous helpings of meat. Their signature shabu-shabu contains thin slices of beef which are cooked in the soup then rolled around pieces of matsutake for a hearty combo.


To finish, you’ll be served up mushroom rice in a traditional clay pot. Don’t worry if you can’t finish the lot. Who could blame you after you’ve been feasting on dish after dish of the best meat, fish, and fungi in the city.
