The sheer white exterior of this restaurant gives a distinctly French impression, but conceals a contemporary Japanese space inside. This impression isn’t for nothing however, as the chef here trained in French cuisine and enjoys applying its skills to the cuisine of his homeland.
This means a menu which fuses tradition with contemporary tastes and approaches. The exact dishes change with the seasons, but might include a sweetfish rice claypot; a soup with sea bream, oyster, and bitter melon; or roast beef with onion and herbs.
Premium ingredients are used throughout, such as wild-caught freshwater eel and suppon (turtle).
