Known for its rich, fatty pork bone broth, tonkotsu ramen, originally from Fukuoka Prefecture, has become a staple comfort food across Japan. Paired with a serving of crispy fried gyoza dumplings, this might just be the ultimate Japanese meal to try (and make!)
During this cooking class in Tokyo's Book Town neighborhood of Jimbocho, you'll learn how to make these delicious dishes to recreate them back home anytime, guided by a knowledgeable and friendly host.
Apart from being a passionate foodie, Michiko is a former English teacher with 20 years of experience. Now, she uses her English language skills to spread her passion for Japanese home cooking in her cozy, welcoming lessons.
Your cooking class will start with a briefing on the ingredients and how to find them in the supermarket. You'll then get hands-on experience making noodles from scratch, and Michiko will guide you in achieving an ideally bouncy and chewy texture. You'll be shown the best way to mix, stretch and cut the dough using traditional methods instead of machines. Once ready, you'll choose from a selection of toppings, including boiled eggs, chashu pork, spinach and naruto, to finish the dish.
Now, you'll make your second dish: gyoza. Each delicate dumpling you'll make from scratch will be filled with minced pork and vegetables. Under the careful guidance of your host, you'll panfry the gyoza with extra care to achieve a crispy dumpling skirt.
Enjoy your hearty meal in conversation with Michiko. After the experience, why not explore the area? Jimbocho, known as Tokyo's Book Town, is full of secondhand book shops, cafes and restaurants, making it a great place to see a different side of Tokyo away from the crowds.

Remarks
When rolling out the dough, it will be placed in a plastic bag. You’ll be asked to take off your shoes and step on it to knead it. Plastic bags and towels are provided.
This class is held in a rented kitchen. If the kitchen specified on the page is not available, your host will notify you and provide the meeting point details for the new venue.
