The menu’s centerpiece is the A5-ranked Kobe beef, which is marinated in-house and served raw so guests can grill it to their preference. The restaurant also offers its signature marinated meats, simmered with vegetables in a rich beef bone soup and soy sauce base, then marinated for 24 hours with natural sweeteners like apples. Japanese wagyu cuts, including top loin, ribs and skirt steak, are paired with one of the restaurant’s 35 specially crafted sauces.
