The paternal half of the father-son duo who run this restaurant trained at Sushi Kiyota in Tokyo — hallowed ground for any true sushi lover. Now he owns his own shop in Saga, where his son acts as his assistant.
They are ambassadors for Karatsu-mae sushi — a style unique to their port town in Saga Prefecture perched on the tip of a small peninsula surrounded by clear seas and green hills. Their sublime renditions of this historic local style have made them the only restaurant of their kind to achieve two Michelin stars.
Inventive small dishes such as poisonous stonefish sashimi, sesame soy horse mackerel, and scallops with grilled eggplant paste, are followed by a series of nigiri featuring unique local varieties and classic favorites. Each is handily explained on an English menu, as this family team are eager to share their local style of sushi with the world.
