Chef Ryo Shikano assumed ownership of Sushi Hatsu in 2007. With a fervent desire to explore the true essence of sushi, Chef Shikano devoted himself to constant improvement, nurturing his inquisitiveness every day. This led to the restaurant's name change in 2018, transitioning from Sushi Hatsumi to Sushi Kano, continuing its fifty-year legacy.
Sushi Kano holds a steadfast commitment to sourcing exceptional ingredients. To deepen their understanding and establish connections with producers, the team regularly visits fishing grounds, farming areas, and sake breweries across Japan. This ensures that only the finest ingredients make it onto the plates.
From their location in Edogawa, Sushi Kano delivers an authentic sushi experience with a focus on preserving the original nutrients of the ingredients. He prefers to use natural, organic ingredients and refrains from using white processed sugar to better highlight each dish's natural flavor.
