They’ve made it their mission to “promote awareness of refined Japanese culture throughout the world through food.”
To spread the gospel of Ginza’s fine dining culture, they’ve already opened multiple outlets in the US and China, garnering a wide following (and a few Michelin Stars) in the process. Regardless, the original is always the best, and those with the chance should visit the Ginza flagship store, where founder and head chef Akifumi Sakagami still works his magic.
His seafood is sourced both locally and from his hometown of Sapporo, where the very best abalone and sea urchins are found.
