Although the kaiseki dining style has its roots in the tea ceremonies of historic Kyoto, plenty of Osaka natives would argue that it was perfected on their streets. If you want to be the judge, Koryu is an excellent place to sample the local style yourself.
This traditional Michelin-starred restaurant takes the dishes and format of kaiseki dining, and combines it with the richer flavors of Osaka. The chef-owner is an Osaka native, and has spent the better part of his life perfecting his preparation methods for local ingredients. His specialty is locally-caught seafood and vegetables prepared in the Naniwa style.
Throughout the year, Koryu features seasonal menus, which highlight ingredients that are only available for a limited time. These usually feature a central ingredient such as sweetfish, bamboo shoots, conger eel, or even the famous Japanese fugu pufferfish!
