The chef at Hana Ita has gained over three decades of experience at a top Nihonbashi restaurant before moving to Sendai to start his own. His omakase (chef’s choice) menus are filled with seasonal ingredients, so the dishes change frequently throughout the year.
Although the dishes on the menu vary wildly with the seasons, expect a range of preparation techniques for his high-quality seafood including sashimi, tempura frying, charcoal grilling, and claypot rice cooking.
Sake from the local Tohoku area is chosen to match the food, with clear flavors that complement the premium local ingredients. They also stock a large selection of red and white wines for a contemporary twist to fine Japanese dining.
