In spite of its decidedly Japanese name — with “itamae” referring to the designation of an expert sushi chef — Itamae Bar doesn’t just offer sushi. It offers seafood prepared every way under the sun, from traditional Japanese methods like salt grilling and sashimi, to slightly more esoteric methods like acqua pazza (poached in Italian herb broth). Fish comes in small, medium, and large sizes, with the large size being an entire half of a fish.
But a bar isn’t a bar without a solid drink selection. Needless to say, Itamae Bar doesn’t skimp on the drinks either: it has plenty of Japan’s finest beers, sake, shochu and other spirits on offer. But it’s particularly proud of its white wines from Yamagata Prefecture, which are said to go excellently with the restaurant’s seafood selection.
