This sushi restaurant grew from the chef-owner’s passion, which began when he was in high school. Chef Tadayasu Morita had wanted to open his own sushi restaurant for so long that he had worked extremely hard from a young age to earn the skills and knowledge needed for it. Gion Sushi Tadayasu can be found in Kyoto’s historic district, right around the corner of Hanamikoji in Gion. The restaurant itself reflects the truest Kyoto aesthetics, with bamboo shades and shoji walls.
As amazing as the decorations and architecture are, the sushi dishes are ten times better. Chef Tadayasu strictly selects the best fish from the market himself, and depending on what’s in season and what’s freshest, that will determine the menu at Gion Sushi Tadayasu.
Chef Tadayasu applies the Edomae style techniques to his sushi. Two types of vinegar rice are used as well — one is red vinegar and the other is a mixture of two different kinds, used specifically with tuna. The rice is also portioned differently depending on the kinds of sushi. Every aspect of the sushi craft is meticulously thought out at Gion Sushi Tadayasu.
Don’t forget about the range of Japanese sake — at Gion Sushi Tadayasu, the sake is ever changing based on the seasons to suit the different kinds of sushi.
