Oddly enough, Chisoya Kono may be classified as an izakaya by multiple gourmet websites — it was even called such when it received a Michelin star in the Michelin Guide Hiroshima-Ehime 2018 — but it is very much a kaiseki restaurant in terms of its menu offerings.
The business was passed from the original owner to his nephew, who now mans the kitchen while his wife tends to the guests. While the menu is predominantly Japanese, dishes on the menu at Chisoya Kono aren't afraid to take influences form different culinary schools from all over the world. Some particular highlights include like sardine sashimi, suppon (turtle) soup, and spare ribs cooked in red wine sauce.
There's a reason why Chisoya Kono is often mistaken for an izakaya, in spite of its Michelin Star status — it's because of its drinks selection. The head chef is especially particular about his sake, boasting some of the rarest and most vaunted varieties from breweries all over the country. Sake connoisseurs could spend hours just sampling from the collection on display there, return another day, and still not be done.
