Step through the simple entrance — almost indistinguishable from the houses surrounding it — and a neat countertop with just five seats drives home the private nature of a meal at Chakaiseki Zushi.
Originally, chakaiseki was served as a light meal of simple dishes that opened a formal tea ceremony. The kanji for this form of kaiseki reflects the practice of slipping a warmed stone between the folds of one’s kimono — light, but also solid enough to retain heat and comfort the user.
The arrangement of small dishes, the red-vinegared sushi rice, and fresh ingredients are carefully considered to best express simple, pure flavors. Any guest who spends precious time with this cuisine is bound to come away with a deeper understanding of Japan and its traditions.
