Edomae sushi is steeped in history and tradition. But at Sushi Ino in Matsuyama City, visitors will find it presented in a very contemporary atmosphere — with slick modern interior design and black chef uniforms. In true Edomae style, the restaurant sources its tuna directly from Toyosu Market in Tokyo.
Other difficult-to-find ingredients are sourced from around the country, with local ingredients making an appearance in the form of the white fish that’s so popular in Ehime Prefecture. The generous series of nigiri in the set-course menu will include dishes like squid, octopus, prawn, tuna, sea urchin, eel, and tamagoyaki (rolled omelet).
