The restaurant’s name means “next to” in old Italian, chosen by chef Murata Takashi with the desire to have his Michelin-starred restaurant be the place people go to when they crave the warmth of Italian food. Located in the deep of Osaka’s Chuo district, the strength and originality of A Canto’s cuisine lie in the ability to make use of local ingredients, updated with traditional Italian recipes. In the late '90s, Murata moved to Italy to train at esteemed establishments, including Enoteca Pinchiorri in Florence and the three-Michelin-starred Uliassi Il Centro, before launching his own venture. The hybrid nature of the restaurant is immediately apparent; while the recipes are distinctly Italian, the interior evokes the charm of a counter-style Japanese kappo. This deliberate design choice allows customers to witness the cooking process up close. It’s the flavor that can transport diners to a Florence trattoria, with each dish possessing an identity of its own. Starters of salad such as asparagus are dressed simply with olive oil and parmesan cheese. The cherry salmon, or sakura-masu, is slow-cooked and served atop a vibrant Genovese sauce. A standout dish is the homemade bavettine, expertly tossed with Italian salted mullet roe and lime. The dining experience at A Canto is further enhanced by Murata’s warm service.
