Located in Oita Prefecture, Usukifugu Yamadaya is probably the most famous fugu (pufferfish) restaurant in the whole of the Kyushu region. The original — the former holder of several Michelin stars — is over 100 years old, and is in the hands of the third generation of owners.
Formerly located in Nishi-Azabu, Yamadaya's Tokyo outlet is now located on the 35th floor of the Marunouchi Building, right next to Tokyo Station. It borrows its menu, decorations, and service style from its parent restaurant, and even serves the same fish caught from the strip of sea between Kyushu and Shikoku, the Bungo Channel. The most striking form it’s presented in is perhaps the thin slices of blowfish sashimi, fanned out on the plate to resemble a chrysanthemum.
The zosui rice soup is also one to look forward to, made with a jelly of boiled fish bones, head, and tail — a historic recipe not commonly seen nowadays. From May to June they also serve a special Shiroshita flounder set course menu with a unique range of dishes.
