Specializing in the old ways of making sushi in Tokyo, Tsuruhachi brings the customers back in time to the Edo period through his expert sushi craft.


Adding only a light touch of red vinegar to the sushi rice makes the rice more delicate: soft enough that it’ll come apart graciously in the mouth, giving way to the rich flavors of the seasonal ingredients.


At Tsuruhachi, both omakase style (where you leave it to the chef to serve you the types of dishes) and okonomi style (where you choose your own dishes from the menu) dining are available.
