Teppanyaki has always been considered an especially opulent dining style. There is nowhere for flaws to hide as each ingredient transforms from raw material to a tantalizing dish right in front of guests.
No one knows this — and holds this virtue with such reverence — as the chef behind the grill at Teppan Kaiseki Rindo. Located at the One Station Hotel Kumamoto, the venue blends traditional Japanese course dining with the contemporary artistry of teppan grilling.
Rindo’s semi-circular counter offers a great view from any seat in the house. Skilled chefs prepare local Kumamoto seafood and the prefecture’s special brand of Japanese Black wagyu beef, the “Wao” brand beef. The wagyu, often the climax of the meal, is served with five distinct condiments, followed by either garlic rice or fragrant chazuke, where green tea, dashi or hot water is poured over cooked rice.
The venue incorporates elements of kaiseki cuisine into its teppanyaki dinner and tosses top-shelf ingredients into the mix. Live abalone and lobster are prepared on the teppan, while French-inspired lobster mi-cuit is topped with caviar, and grilled shabu shabu beef is paired with sauteed foie gras.
