The chef at Shinyashiki Kofukuron is a native of Kumamoto, but he became the professional he is today through training in the culinary hotspots of Osaka, Tokyo, and Paris. Since 2011, he has been running this store in a quiet, residential part of Kumamoto city
Here, he serves up fantastic kaiseki cuisine, paired with a range of premium sake which cycles regularly. Six counter seats are available for a view of the kitchen, and there are also two private rooms with large windows giving a bright and spacious feel.
Be sure to set aside enough time for this feast of traditional Japanese food — a meal here can run up to 4 hours! This is due in part to the large number of dishes, as well as how easy it is to lose track of time when under the spell of such fantastic hospitality.
