Higashi Azabu may not be a big-name district on Tokyo’s culinary map, but it’s a budding culinary neighborhood that’s well-known by those with a nose for the next big things in Japanese gastronomy. Sushi Sugaya is one of the best sushi restaurants in this new gourmet hotspot.
The owner-chef trained at some top Tokyo sushi eateries such as Sushi Arai, before opening his own place in 2018. As you walk towards the door, you’ll be greeted by his wife, who handles all of the hospitality with careful attentiveness.
White fish is the speciality here, but the great range of 15 nigiri on offer spans a wide range of classic sushi cuts and other, precluded by around five inventive appetizers to set the tone. The most celebrated dish on the menu is the Spanish mackerel, aged for three days and cured in kelp, slices so incredibly thin that it falls apart in the mouth.
