In the midst of the sushi craze, Sushi Rei positions itself as a mature sushi restaurant, built on a reputation for true Edomae sushi and high-quality sake. The restaurant operates on a “clear bill” approach, offering high-class sushi at rates that are accessible to younger patrons. Part of the unique formula at Sushi Rei is Chef Nagai Reoya’s forward-thinking approach to the art-meets-sushi concept. Trained for 16 years, including an apprenticeship at the celebrated Sushi Tatsuma in Ginza, he crafts a wide range of traditional and innovative sushi, such as silky-smooth chawanmushi topped with salmon roe and thick-cut mackerel sashimi.
Art is seen in the care the restaurant puts on its tableware and crockery, crafted by brilliant young artists with the intention of offering guests a unique way to experience Japanese culture. The gold-painted, abstract-shaped ceramics used for bowls are fired by Tomita Hiroyuki, while pitch-black lacquerware from Ishikawa-native Kohei Kirimoto serves as chopstick stands. The centerpiece of the Sushi Rei counter features a captivating art fixture created by mixed-media artist Naoki Onogawa, with all these stunning pieces available for sale.
The venue believes that the taste of drinks can change depending on the glass and its shape, allowing diners to select their glassware for alcoholic beverages. This completes their triple concept: exceptional food, premium sake and fine glassware come together to create a truly holistic experience.
