Ranmaru
A proving ground for young talents, this sister restaurant of a top Meguro sushiya will show you the future of sushi first-hand.
Restaurant Details
An offshoot of the highly-rated Sushi Rinda, also located in the Fudomae area of Meguro, this outlet is geared towards giving young sushi aspirants a chance to prove themselves.
That’s why the chef in charge of proceedings here, a man by the name of Yukichika Shimazu, is only 25 years old! The energy and enthusiasm of this young chef is palpable, and it makes for a lively atmosphere.
His method of cooking rice involves applying pressure to lock moisture into the grains, making his rice beds cling together perfectly. In sourcing the toppings, Rammaru benefits from the connections of its esteemed sister restaurant, having much of its fish delivered directly from the ports.
The drinks menu also has a unique touch: an Uwajima mandarin juice made at the owner’s countryside house. For those who prefer something a little more alcoholic, there’s also plenty of sake, champagne, and wines on offer.
It’s likely you’ll be seeing Shimazu-san’s name up in lights on the hallowed streets of Ginza some day, so grab the chance to see him in his formative phase while you still can!
