Noeud (pronounced "noo") in French means "knot," and it is around this central theme that this French restaurant near Nagatacho Station operates.
At Noeud.Tokyo, the act of eating and cooking itself is a symbolic act of tying a knot: between seasons, nature and food; between chef and guest; between producer and chef; and between guests, as they sit together at the counter. Through each service, Chef Nakatsuka Naoto brings together all these elements, emphasising the inextricability of each of them in the restaurant.
While the restaurant used to have a lunch service on Saturdays, it now only serves dinner. This hasn't diminished the restaurant's popularity in any way, however, as the seats at Noeud.Tokyo's thick hardwood counters are always sold out within minutes of opening, offering guests a front-row view of the magic happening.
It's there that the chefs swiftly prepare dishes with unmatched precision, creating delicious works of art reflecting the restaurant’s focus on sustainability. For his efforts, Chef Nakatsuka was awarded not just a Michelin Star in 2022, but the coveted Green Star for excellence in sustainability.
As is to be expected for a Michelin-awarded restaurant so conveniently accessible — just a block north of Nagatacho Station — Noeud.Tokyo can be difficult to secure reservations for. But the act of communion around Chef Nakatsuka's counter is something that should be experienced by everyone at least once.
