Roppongi is known for its lavish nightlife and inspiring, classy cuisine. One of the rising stars emblematic of the district’s fusion cuisine scene is Metis Roppongi. Centered around the Japanese saying of “wakon-yosai” — literally “Japanese spirit, Western teachings” — Metis Roppongi effortlessly combines French and Japanese cuisine into a wholly unique and delectable dining experience.


Stepping inside the restaurant, customers are greeted with a sophisticated and intimate scene. A dark wood counter frames the blazing kamado wood-fired stove, where Metis’ expert chefs turn ingredients into flame-grilled magic. Along with the enticing sounds and smells of the stove in action, just entering the restaurant is a feast that tantalizes all of the senses.


The name “Metis” is chosen for its dual meaning. In Greek, its foremost meaning is “mixed blood”; Metis leans into this with their dishes, which use fresh and high-quality ingredients Japan is known for, like mouth-meltingly marbled wagyu beef chuck eye and seasonal vegetables, arranged and prepared based on French techniques.


It is here that the second meaning of “Metis” comes in: it doubles as the name of a Titan goddess of wisdom. It’s fitting for head chef Suzuki Masatsugu, who has accrued a truly staggering wealth of knowledge at his relatively young age. Entering the restaurant industry at just 15 years old, he moved to France when he was just 20 to begin an apprenticeship at a Michelin-starred restaurant. A second stint in France saw him train at further acclaimed restaurants such as Laperouse, Gerard Besson and Stella Maris, before returning to Japan, where he eventually found himself at the helm of Metis Roppongi.


Drawing upon his extensive experience, Chef Suzuki puts unique twists on pilaf, steak and even familiar desserts. Diners can expect a wholly original experience in Metis’ omakase course — an unforgettable display of 11 beautifully-arranged dishes.
