The star of this gastronomical show is the Omi beef from the Okazaki Farm in Shiga Prefecture. Allowed to grow until these cattle turn 40 months old, this patient process gives the meat a richer and deeper flavor regardless of the cuts. The centerpiece grill is where the performance unfolds: the chef turns on the heat and serves beef tongue with lemon, while an appetizer of beef sashimi is beautifully marbled. From land to sea, quality prevails; spiny lobster is halved and grilled to perfection, and the abalone “steak” is meticulously scored and cooked with a sauce made from its liver.
