The benefit of the intimate, six-seat counter at this 2020 Michelin starred sushi restaurant is that every movement of the chef’s hands is visible throughout. That’s the best way to appreciate the intricacy of putting together world-class nigiri.

The chef at Ginza Rin Nishimura cuts some of his sushi toppings in a lattice pattern for a texture which is as beautiful to look at as it is to eat. To source the ingredients for his generously-sized sushi, he travels to Toyosu Market every morning.


The sushi may be traditional, but the drinks menu is thoroughly modern. You can choose from a range of champagne, wine, whisky, and sake from all over Japan to go with your meal.
