The chef at Ginza Rin Nishimura cuts some of his sushi toppings in a lattice pattern for a texture which is as beautiful to look at as it is to eat. To source the ingredients for his generously-sized sushi, he travels to Toyosu Market every morning.
The sushi may be traditional, but the drinks menu is thoroughly modern. You can choose from a range of champagne, wine, whisky, and sake from all over Japan to go with your meal.
