The owner of this exquisite restaurant is the world-renowned chef Koji Shimomura, who is constantly attempting to one-up himself at his own cooking techniques. His determination to always challenge himself has led to his biggest stroke of inspiration: he would attempt to master French cuisine using only plant-based ingredients.


The regular menu at Edition Koji Shimomura is made with hardly any heavy ingredients like butter or cream, resulting in an array of dishes that are low in calories and extremely light in texture.


Try Chef Shimomura’s specialty dish: seaweed-flavored cold oysters that have been lightly cooked with seawater and served in seawater jelly with citrus. You’ll be pleasantly surprised at how rich the natural flavor is, as in all the dishes served at Edition Koji Shimomura, where only specially-selected and premium ingredients are used.
