Located in Niigata, Common was awarded one star in the MICHELIN GUIDE NIIGATA 2021. In the nine years since opening the restaurant in his hometown, the owner Hasegawa has gotten to know many people and learned about the local delicacies, and now he makes a course with a selection of Niigata's best foods.
Every dish is gorgeously plated; for example, the Sado Island grouper sashimi. Ginkgo and autumn leaves decorate the vegetables, giving a seasonal touch to this lovely dish. The meat of the grouper, which was quickly cooked in hot water, is firm and delicious. The ponzu (Japanese sauce made with citrus) and green onion spice up the dish, giving it a refreshing taste.
Sea bream is also recommended. It has been fried and then tossed in the soup, and has a delicious concentrated flavor. Turnips and shiitake mushrooms are also mixed with the grated radish, giving it a comforting taste.
