It’s one of the things Chibo is good at: building an experience. The store first opened in 1973 in Osaka’s Sennichimae, before it spread nationwide and officially became Japan’s first okonomiyaki chain. In recent years, they have even expanded to international locations.
Chibo’s mission is to prove that the savory cabbage pancake, often associated with hawker food or street snacks unfit for elegant venues, can be elevated beyond its status as a simple flour-based dish. For this, the restaurant pays attention to all the details. The batter is kneaded fresh to order using a proprietary flour blend, with yam as a binder, ensuring a fluffy texture. Domestic cabbage, chosen for its sweetness when cooked, is a standout ingredient.
