Rest assured that diners looking to try Kansai-style okonomiyaki in Ikebukuro can head to Chibo. Conveniently located above the Seibu Department Store and directly connected to Ikebukuro Station, it’s a breezy access that protects anyone from the rain.


It’s one of the things Chibo is good at: building an experience. The store first opened in 1973 in Osaka’s Sennichimae, before it spread nationwide and officially became Japan’s first okonomiyaki chain. In recent years, they have even expanded to international locations.


Chibo’s mission is to prove that the savory cabbage pancake, often associated with hawker food or street snacks unfit for elegant venues, can be elevated beyond its status as a simple flour-based dish. For this, the restaurant pays attention to all the details. The batter is kneaded fresh to order using a proprietary flour blend, with yam as a binder, ensuring a fluffy texture. Domestic cabbage, chosen for its sweetness when cooked, is a standout ingredient.


Watching the chef at the teppan grill is a performance in itself: the okonomiyaki is flipped four times to trap air for a light, airy interior while achieving a perfectly crispy exterior. Finally, the pancake is draped in sizzling brown sauce right on the iron grill.


Chibo has curated a well-crafted menu, featuring the Chiboyaki — an eponymous okonomiyaki creation with a head-on shrimp protruding from the stack, completed with crispy shrimp leg crackers. Their house specialty, the Dotonboriyaki, embodies the eclectic spirit of Osaka’s streets: a massive okonomiyaki loaded with pork belly, squid, small shrimp, beef tendon, konjac and cheese. The crowd favorite? The tonpeiyaki, an umami-explosive egg omelet filled with shredded pork.
