Restaurant Details

Opened in 1984, this French cuisine restaurant in Tokyo is famous for its inventive terrines and use of rich sauces. Chef and owner Noboru Inoue worked in Europe throughout his youth, developing his skills at some highly-reputed restaurants around the continent.


The restaurant, which he created upon his return to Japan, is an image of elegance and classicism, just as the menu honors the traditions of French cooking with high-fidelity renditions of dishes such as Dijon roast lamb and foie gras with cabbage.


The signature dish, a lamb pie packed with truffle sauce and foie gras, is named after the opera singer Maria Callas, who Inoue-san came to know well when she was a regular at the Parisian restaurant Maxim, where he worked in the formative years of his youth.
