Shinya Fukumoto spent nine years traveling around Italy and Spain, working in some of the most prestigious restaurants in Valencia during that time.
Upon his return, he established Ca Sento — named after the famous restaurant in Valencia — where he replicates the dishes he learned using ingredients from his home country. The results are, he admits, often quite different from the original, however this only means that something new, unique, and equally brilliant is created by the combination.
The restaurant’s set course menus begin with a captivatingly beautiful spread of tapas, followed by course after course of traditional Spanish cuisine, including dishes such as caldoso — rice in a rich red broth.
The restaurant is one of the most famous in Kobe, and is often ranked number one in the entire city. Ever humble, Fukumoto-san attributes this success to the spirit of teamwork and cooperation he tries to foster in his kitchen, rather than his own genius.
