Through the use of rustic, quality cooking, one restaurant in Kobe perfectly conjures up the valleys and villages of provincial Spain. With only the roaring flames of a wood-fired oven, the chefs at bb9 Bebek prepare hearty dishes which express their belief that food is first and foremost a fuel for life.
Their vivacious philosophy and excellent smoked dishes have won them many fans in the city, a place famous for its high number of outstanding European restaurants. They eschew ostentatiousness in favor of simple, well-prepared plates from regional Spanish cuisines (and of course, an impressive selection of Spanish reds).
They only accept a small number of reservations each day on account of the resource-intensive firewood-only cooking, and the time which it takes to prepare dishes in this style. However, if you manage to secure a table, you're in for a real treat.
If you were under the impression that only meat and fish could be smoked, think again. At bb9, they serve smoked butter on smoked bread, and even finish their set-course menu with smoked ice cream!
