Fugu pufferfish is a uniquely Japanese delicacy, and it famously requires a high level of skill to prepare properly. While the capital has no shortage of options for those looking to try the dish, Ajiman in Roppongi is undeniably one of the greatest.


Offering counter seats as well as private tables, this restaurant is incredibly popular among locals. The doors are only open during fugu season, which lasts from September until May. The peak time is in the height of winter.


For those lucky enough to enter through the doors of this simple-chic establishment, an impressive range of dishes awaits on both set-course and a la carte menus. Highlights include fugu sashimi, hot pot, and fugu deep-fried in the style of Japanese karaage.


The cherry on the top of these outstanding dishes is the fantastic signature sauces, almost as impressive as the dishes themselves. Enhance each bite with your choice of monkfish liver sauce with spicy radish, fish scallion sauce, or a special ponzu sauce.


It’s best to reserve before the start of the season in September, or at least several months in advance.
