You’ll begin your culinary journey with an exploration of Kyoto’s fresh seasonal vegetables. Start your tour at ELOVE, a restaurant focusing on local production and consumption of fresh vegetables, where you will make your first purchase of organic veggies. Explore a depachika (department store food market) to experience Japan’s modern food culture and trends by region. Make your way to Nishiki Market where you’ll shop for more temari sushi ingredients. After experiencing the culture of Kyoto’s fresh vegetables and produce firsthand, it’s time to use this bounty of produce to make your own temari sushi. You’ll start with the all-important base as you learn how to roll the vinegar-infused sushi rice into a perfect ball shape.
Next is the toppings. You’ll craft each sushi into a beautiful centerpiece using seasonal vegetables, pickles, and edible flowers. With an array of bright and earthy colors, your temari sushi will look almost too good to eat. Make sure to take pictures of your creations before diving into your meal.
