Experience Details

Sushi comes in various styles, with nigiri and maki (rolled sushi) perhaps being the most well-known. Both can be easily found at conveyor belt sushi restaurants and high-end shops alike. A less common but truly kawaii style is temari sushi. Taking inspiration from a traditional Japanese toy called temari (hand ball), these sushi are small and round, usually served at parties and special occasions.

In this cooking class in Kyoto, you’ll learn how to craft adorable temari sushi using local vegetables and edible flowers, making each ball pop with vibrant colors and fresh flavors. While temari sushi commonly incorporates raw fish, this class will teach you how to make vegan (and gluten-free) variations.

You’ll begin your culinary journey with an exploration of Kyoto’s fresh seasonal vegetables. Start your tour at ELOVE, a restaurant focusing on local production and consumption of fresh vegetables, where you will make your first purchase of organic veggies. Explore a depachika (department store food market) to experience Japan’s modern food culture and trends by region. Make your way to Nishiki Market where you’ll shop for more temari sushi ingredients. After experiencing the culture of Kyoto’s fresh vegetables and produce firsthand, it’s time to use this bounty of produce to make your own temari sushi. You’ll start with the all-important base as you learn how to roll the vinegar-infused sushi rice into a perfect ball shape.

Next is the toppings. You’ll craft each sushi into a beautiful centerpiece using seasonal vegetables, pickles, and edible flowers. With an array of bright and earthy colors, your temari sushi will look almost too good to eat. Make sure to take pictures of your creations before diving into your meal.

With the cooking class finished, you’ll leave with an English recipe in hand, ensuring that you can make delicious temari sushi for your next big party or for a delightful dinner that brings back memories of your sushi-making experience in Kyoto.
