There's nothing like Grandma's cooking, which you'll get to experience in this heartwarming cooking experience in Nagoya.
Grandma Junko was born and raised in Nagoya, where she has nurtured her passion for healthy Japanese food and cooking. She turned her passion into her purpose by opening a natural food store, later making her first foray into teaching with a healthy cake and natural yeast bread cooking class.
A licensed cook, stickler for hygiene, and self-proclaimed vegetable sommelier, hosts like Grandma Junko are hard to come by! This cooking experience will teach you lifelong skills and the beauty of traditional Japanese cuisine (washoku). Washoku can be broken down into two components, 'wa' (Japan) and 'shoku' (food or to eat)–a term steeped in history that represents the food of Japan.
Care to learn more? Well, you're in luck! Your host happens to be an expert in washoku cooking and is eager to share her knowledge with you.
During this hands-on experience, Grandma Junko will teach you about washoku philosophies and key ingredients used for this style of cooking. Shio koji–a condiment used for marinades/seasoning–is a white paste comprised up of koji (a bacteria starter), rice, and salt. Shio koji, miso paste, and soy sauce are cornerstones of washoku cooking.
Speaking of cooking, what's on the menu today? You'll be creating an 'ichiju sansai' meal, translating to 'one soup, three dishes'–a concept that ensures a balanced meal.
You'll have a choice between two set menus, both with two sides and a soup in common. The default option will be chicken teriyaki. If you'd prefer the salmon option, please book through the Options tab.
Chicken: Grilled red miso chicken, Japanese rolled omelet, spinach or komatsuna with sesame sauce, Grandma Junko’s hearty soup, and 2 onigiri (salmon flakes and katsuobushi)
Salmon: Grilled koji salt salmon, Japanese rolled omelet, mashed tofu salad, pork miso soup, and 2 onigiri (salmon flake and katsuobushi)
