Healthy and uncomplicated, Japanese buckwheat noodles (soba) are one of the country's ultimate comfort foods. In old times, traveling soba vendors used to carry portable stalls and satisfy the late-night cravings of the people of Edo (now Tokyo) after restaurants closed down. Usually enjoyed with other Edo dishes and generous amounts of sake, soba maintained its popularity and is now a staple in New Year celebrations and other important events in Japan.
Making soba can be considered an art form — a conjunction of the right temperature, ingredients, environment, and a pair of knowing hands. In this experience, you will make your own soba noodle dish from scratch, guided precisely by a Japanese soba noodle master. You'll mix in the wheat and soba (buckwheat) flour, cut the noodles thinly and precisely, and learn the secrets to delicious soba from your host. Under their tutelage, you'll discover the unique flavors of traditional Japanese cuisine and have the chance to learn more about Japanese food culture itself.
Unlike other noodle dishes, soba's grainy flavors come out best when dipped in a light-bodied sauce like dashi or soy sauce or topped with thinly chopped seaweed, which complements its chewy texture. Once you finish cooking, enjoy your delicious noodles with your host.
