Learn to cook traditional Takayama dishes with Don, a certified chef and business owner. Your host will not only share his vast culinary knowledge, but also delve into the fascinating history behind these dishes, sharing interesting insights about the unique traditional lifestyle in the area. While learning more about Takayama, you’ll make three local specialties:
Hoba miso with Hida beef: A traditional dish from the Hida region in Northern Gifu, hoba miso a rich, savory miso paste cooked in a magnolia leaf (hoba). You’ll use A5-grade premium Hida beef, served with vegetables in this miso dish. Enjoy the savory aroma of miso infused during the grilling process and the deep umami of the tender meat.
Tsukemono Steak: A quintessential Takayama soul food, tsukemono “steak” actually doesn’t contain meat, but instead makes the most of the old tradition of pickling vegetables to preserve them during the snowy winter months in the deep mountains of the Hida region. Because of the cold, even pickled foods would freeze, so they would be cooked over an irori hearth to be eaten. Once eggs became more widely available, pickled vegetables would be cooked with eggs. People would grill pickled vegetables on a hot griddle, much like they would cook a steak, hence the name of the dish. The egg mellows the saltiness of the pickled vegetables, creating a great balance of flavors.
Gohei Mochi: A decadent snack of non-glutinous grain rice (ordinary rice) pounded into a dense consistency, then skewered, flattened, coated with a sweet and savory sauce with soy sauce and sugar, and grilled until it develops a caramelized, slightly charred crust. Meeting Point and Meeting Time
Please arrive at least 5 minutes before the starting time. The restaurant is located within 15 mins walk from Takayama station. The details are shared upon a booking.
Remarks
An adult must accompany middle school-aged children.
Fire will be used during the cooking process, so participants are asked to be careful to avoid burns and pay close attention to accompanying children.
If you would like rice and miso soup, please inquire upon booking. Your host can prepare both free of charge for the number of guests in your group.
