千叶雄二是一个忠于自己根基的人。他在岩手县出生长大,从小就爱上了和牛。当他得知自己的小学要倒闭的消息后,主动提出接手。现在,他的汉堡包生产工厂和肉类学校都在同一栋楼里;改建后的建筑焕发出勃勃生机,为和牛的潜力做出了定义和重新定义。
和牛烧肉角野新六本木是千叶的创业项目之一,其对肉质的认真态度也就不足为奇了。千叶精选重达 400 公斤、经过 30 个月育肥的雌性日本黑毛和牛,并在最后几个月添加小米以增加其甜味。这些肉在餐厅一楼的恒温仓库中陈化,然后悬挂起来,再切成厚厚的肉块,在铁网上进行桌边烧烤。
