窑烤牛排(或称罗伽玛牛排)可能是日本保存最完好的烹饪秘密之一。窑烤确保了各面的均匀烹饪,在外部形成酥脆的外皮,并将肉的天然鲜味和汁液密封起来。其结果是风味、口感和多汁性都与众不同。
那么,与烧肉或铁板烧相比,焙釜为什么不那么容易买到呢?困难在于建造窑炉的高昂成本和恰到好处的烹饪技术。烧烤是一门艺术,只有少数人才有经验。
因此,Rogama steak arcanum 的主厨 Shinya Suzuki 能够以这样的价格提供窑烤牛排,就显得尤为难能可贵了。他曾在烤牛肉餐厅 "镰仓山"(Kamakurayama)接受过培训,后来又在日本最好的牛排餐厅之一:久负盛名的新桥田村町新川餐厅(Shinbashi Tamuracho Aragawa)担任烧烤专家,因此很少有人比他更精通牛肉的制作工艺。为了设计出一种经济有效的烤牛肉方法,他进行了数次尝试,最终于 2023 年 8 月创立了 "Rogama 牛排奥秘"。
