One of the oldest culinary traditions in the Japanese dining playbook, kaiseki — Japan’s multi-course fine dining — is rooted in seasonality and the art of showcasing inherent flavors with simplicity.


In a secluded ryokan surrounded by snow-capped forest by Niseko, this practice takes on a northern interpretation through "kitakaiseki" — a genre that reimagines Japanese fine dining through Hokkaido’s extraordinary terroir.


At the heart of Zaborin’s kitchen is the gifted Yoshihiro Seno, a Hokkaido native with global experience spanning New York and Tokyo. His pursuit of ‘locality’ led him back home, where his approach to fine dining feels like a cultural dissertation on a plate — a seamless fusion of Kyoto-style kaiseki and Hokkaido-sourced ingredients.


Dishes are hyperlocal yet plated with near-mathematical precision — a fitting remark, as Yoshihiro started off as an engineering designer before he turned to cooking. He steams Ginzan rice in traditional clay pots, pickles his own vegetables, and uses Hokkaido miso in its purest form. Staying true to the rhythm of kaiseki, portions are thoughtfully measured — enough to savor, yet leaving room for the next course. Delicacy takes precedence over intensity, favoring nuanced flavors over bold, showy contrasts.


Japanese cuisine is often bound by tradition, but Seno proves that evolution, when guided by craftsmanship and exceptional local ingredients, is the truest homage to the past.
