Known for its earthy color and flavor, soba noodles are usually made using a combination of buckwheat and wheat flour. But Teuchisoba Narutomi’s handmade noodles are known for being made with 100 percent buckwheat flour, without the addition of wheat flour. While this makes the creation process especially difficult, it also gives the noodles a texture unlike any other.
But though the restaurant’s prefix is literally “handmade soba” in Japanese, Narutomi cannot be talked about without making mention of the restaurant’s impeccable tempura.
