Near the foot of the mountains which fill the horizon to the west of Sapporo is a sushi restaurant which serves classic Tokyo-style Edomae sushi to Michelin-star standards.
Their approach relies on simplicity, crafted to perfection. The chef, Tamura-san, sources the majority of his fish from Sapporo’s central market, with great connections to the best fish suppliers on the island. He also maintains links with suppliers in Izu, Kanagawa, where the fishermen are skilled in a special procedure of removing the nerves from fish to maintain their freshness.
Expect some dishes unique to Hokkaido such as kirikomi: gizzard shad marinated in fermented rice, with green chili. Also on offer are a wide range of other seasonal favorites using the freshest squid, monkfish, sea urchins, and abalone which Hokkaido has to offer.
