Not so far from the popular city of Hakata in Fukuoka is the enlightening Daimyo, home to this Michelin-starred sushi restaurant. This is no ordinary sushi restaurant. Owned by chef Takashi Kumagai, Sushi Kuma is everything one could ever ask for in a sushi restaurant: freshness, quality, and mastered techniques.
Chef Kumagai personally commutes to the market himself every morning to pick out the best ingredients for the day. Of course, everything is directly sourced from Kyushu Island — that’s the priority of this sushi restaurant. Expect an array of seasonal dishes in the course menus offered at Sushi Kuma. Main dishes like Edomae-style sushi are accompanied by a refreshing assortment of side dishes like pickled foods and salad. To top it off, the sake selection at Sushi Kuma is impressive as well — they’re all from Kyushu brands, too.
