The young chef, Hiroshi Karashima, learned most of his skills from the previous owner-chef of the restaurant, who is also his father. With his ever-growing passion for the sushi craft, Karashima is determined to create dishes of the highest quality, with ingredients sourced first-hand from farms, fishermen, and producers — all local to Kyushu, of course.
Adding his own cooking techniques alongside those learned from others, Karashima’s omakase course meal gathers the finest of what Kyushu can offer into tiny but fulfilling bites, seasoned with house-made condiments.
