There’s surely no better sight than a perfectly scored piece of fatty marbled tuna, of the kind served up at Sushi Hijikata in Nagoya. With only six seats, this two Michelin-starred restaurant is a microcosm of sophistication. Although it might be small, the light decor creates a pleasantly deceptive sense of space.
Chef Hijitaka spent ten years studying his art in Tokyo before coming back to his hometown to open his own shop, where he serves a maximum of 12 guests every evening to ensure he can give his absolute all to each one.
The sushi generally adheres to the traditions of Tokyo’s Edomae style, with a few local touches such as prawn with the final tamago nigiri. These little touches add an element of surprise to what is already one of the best sushi meals in Nagoya.
