Owner-chef Makoto Fujiwara surely has one of the most Michelin star-studded careers out there. After helping earn this distinction for a series of restaurants throughout his early career, his own restaurant — located in the prestigious dining center of Gion, Kyoto — was awarded double-star status within its first year.
Understandably, seats at his counter are hard to come by, but those fortunate to land one are treated to one of the most exquisite Japanese fine dining experiences in existence. The one menu option is a masterful kaiseki course meal, which changes according to the seasons and the inspirations of the chef, showcasing the traditions of the form in expert style.
This is complemented by wine pairings from in-house sommelier Hiroyuki Jinguji. He has over 700 bottles to choose from when devising the perfect pairings for Chef Fujiwara’s creations.
