MAZ Tokyo, is the passion project of chef Virgilio Martínez. He is founder of the legendary Central Restaurante in Peru, and director of Mater Iniciativa, a research and non-governmental organization that seeks to promote food diversity beyond borders.
Combining French and Spanish influences into innovative, beautifully plated dishes, MAZ Tokyo's commitment to cross-cultural promotion took it straight from zero to two Michelin stars in 2024 — an unprecedented feat.
Martínez’s philosophy is afuera hay más — “there is more outside” — and defines every step of guests' gastronomic journey. Each themed menu at this Akasaka-Mitsuke restaurant is centered around Peru’s great biodiversity, taking guests from the magnificent Andes to the sprawling Pacific coast. Their Vertical World courses engage guests in a journey of altitudes, strengthening the connections between the landscapes and cultures of Peru and Japan through carefully selected ingredients.
While it was instantly popular, MAZ Tokyo's meteoric rise to two stars in the Michelin Guide Tokyo 2024 has made it has made it the new darling of Tokyo's gourmet scene. As such, reservations may be difficult to secure — but those who are lucky enough to secure one are definitely in for a culinary adventure.
